Coconut chip-chip … this delicious chewy, slightly crunchy, sweetmeat is made from coarsely shredded or chipped dried coconut, sugar and spices. Some recipes call for milk and add ginger to spice things up.

Coconut sugarcake on the other hand is similarly made but with finely shredded dried coconut plus a dash of colouring. I’ve seen (and eaten) pink, yellow, green and blue coconut sugarcakes, and of course, the classic white.
Chip chip resembles a rough drop cookie, while the sugarcake tends to be refined drops or cubes.
There is something quite satisfying about nibbling, chewing and nibbling some more on coconut candies …the smell and the taste of coconut…yum!
