Red preserved mango, also known as red mango, is a classic Caribbean fruit snack that even just writing this note, makes my mouth water.

Chopped green mango with skin left on, spice, sugar, water, pepper and red food colouring, are boiled together until mango skin is soft. The quantity of pepper will determine how hot the finished product is. More or less sugar will determine its level of sweetness.
Some recipes are more tart, sweeter or more peppery than others…my personal preference is hot and sweet. Either way, one can also tell when I’ve had red mango…it leaves my tongue a bright red!

Amchar Pommecythere is a savoury snack made from Golden Apple or Pommecythere fruit, garlic and amchar masala, an Indian spice mixture. It is made in a manner similar to Red Mango and can be made sweet or spicy…I prefer spicy.

Last, but not least, is Preserved Pawpaw/Papaya…or Red Pawpaw. Red Pawpaw is prepared along similar lines, using peeled green pawpaw, hot pepper, spices, sugar, salt and red food colouring, to create this delicious and seriously mouth-watering snack. YUM!
